    　　豆制品是我国饮食文化中不可或缺的一部分。在餐桌上，从一杯温润的豆浆、一块软嫩的豆腐，到一盘香浓的腐竹、一碟下饭的腐乳，豆制品无处不在。近日，湖北疾控发布12月食品卫生与营养健康提示，详细介绍了豆制品的营养价值、食用好处、食用量等，同时对“豆制品容易引起性早熟”“豆浆可替代牛奶”等常见误区进行解答。 　　豆制品是以大豆为主要原料加工而成的食品，其主要营养价值在于：优质蛋白质、不饱和脂肪酸、大豆异黄酮，豆制品还富含钙、铁、磷、镁、B族维生素、维生素E等多种营养素。 　　豆制品因富含植物雌激素(如大豆异黄酮)，能通过双向机制调节人体激素水平，对于预防绝经后女性骨质疏松、改善女性绝经期症状以及保护心血管健康等方面都有积极作用。 　　《中国居民膳食指南(2022)》推荐，成人每周摄入大豆105～175克，也就是平均每天摄入15～25克。换算成常见豆制品相当于：豆浆1～1.5杯、豆腐麻将大小一块、豆腐干1～2小包、腐竹(干)一小把。 　　市面上的豆制品种类繁多，建议多样化选择以获得更均衡的营养。如豆腐、豆浆等非发酵豆制品适合日常食用；腐乳、豆豉等发酵豆制品，由于制作过程中需要添加盐进行腌制，因此钠含量普遍较高，可作为调味品适量食用。 　　豆制品在加工后嘌呤含量差异较大：豆腐、豆干等属中低嘌呤食物，痛风非急性发作期可适量食用；但腐竹(干)为大豆浓缩制品，属高嘌呤食物，痛风非急性发作期也需严格限制摄入量，急性发作期则需避免所有豆制品。 　　常见误区 　　1.豆制品会导致性早熟？ 　　错！豆制品中的大豆异黄酮虽与人体雌激素化学结构相似，但其活性远低于人体自身分泌的雌激素，且在体内具有双向调节作用：当人体雌激素水平不足时，它能发挥微弱的补充效应；而当雌激素水平较高时，它反而可以竞争性结合受体，有助于稳定内分泌状态。因此，日常膳食中适量食用豆制品，并不会干扰体内正常的激素平衡，也不会引起性早熟。 　　2.豆浆可替代牛奶？ 　　错！豆浆与牛奶是不同种类食物。豆浆中蛋白质含量与牛奶相当，易于消化吸收，不含胆固醇，且含有丰富的植物甾醇，适合老年人及心血管疾病患者饮用。但普通豆浆中钙含量远低于牛奶，锌、硒、维生素A、维生素B2含量也比牛奶低，因此，豆浆不可替代牛奶，两者最好每天都饮用。 　　记者李慧紫 【编辑:付子豪】|dfg|
